Non-Dairy Palm-Free Butter

By making your own plant-based butter, you can avoid buying more plastic containers. Will that change the world? Just maybe.

Do your best to buy all the ingredients in the bulk aisle, using your own containters! It’s easy and rewarding.

150 ml soy milk, plain unsweetened
2 teaspoons apple cider vinegar
3/4 cup coconut oil, melted
150 ml olive oil
3/4 teaspoon sea salt
1 1/2 tablespoons soy lecithin granules
1/2 teaspoon xanthan gum

1. Mix soy milk with apple cider vinegar. Let sit for 10 minutes to curdle.

2. Place all ingredients in a blender. Blend until completely whipped.

3. Pour into container and place in the freezer for 1 hour.

4. After an hour, put container in the refrigerator.

Yields about 2 cups
