Chana Masala

1 tablespoon olive oil
1 teaspoon coriander seed
1 teaspoon mustard seed
1/4 teaspoon ground turmeric
3/4 teaspoon garam masala
1/2 teaspoon ground chile (cayenne, chipotle, or ancho)
1 teaspoon ginger, minced
3 cloves garlic, minced
1 onion, diced
1 tomato, diced
2 cup garbanzo beans, cooked
1 teaspoon sea salt
1/2 cup water
1 cup spinach, chopped
1/4 cup cilantro, for garnish

1. Warm the oil in a heavy bottomed sauce pan over medium heat. Add coriander seed and mustard seed, and saute over medium heat, until they darken a few shades.

2. Add turmeric, garam masala, and ground chile. Cook for 3 minutes, then add ginger and garlic.

3. Immediately add diced onion and stir until spices are fully distributed. Saute till onions are soft.

4. Add diced tomato and cook for 3 minutes.

5. Add garbanzos, sea salt, and 1/2 cup of water. (Use liquid from cooking the beans if it is available.)

6. Simmer over low heat until desired consistency is reached.

7. Add chopped spinach and stir well.

8. Garnish with chopped cilantro.

Yield: 4 Servings
